Fennel is native to the Mediterranean region. The entire fennel plant is edible and lends itself to a wide variety of cooking applications. This mildly licorice-flavored plant is a member of the parsley family. Fennel also has great health benefits – high in Vitamin C, iron, fiber and potassium. It’s great shaved and used in salads to add a crunchy element. Or, you can use it in stews or added to fish or chicken dishes.
