Fresh ginger looks a little different than what you see in the grocery store. The outside is pinkish white and is less fibrous than the more mature versions commonly available. You don’t have to peel it. It’s native to tropical climates, but grows well here if started early enough and planted in a high tunnel or greenhouse. Freeze it or pickle it to make it last longer. Use it in cooking, tea, cocktails!
