You would need to check the specifics of planting in the South. I'd recommend sticking with soft neck (as opposed to hard neck) varieties as first, as I've read and my experience was the soft neck was easier to grow. We usually plant the cloves it in around mid October, put some hay down for mulch, fertilize it a few times in the spring, and pull it out in July. One of the easiest things we grow. We only did 6 "squares" this year. I'd say go for it!

I read that whole book about garlic, so I should be some kind of expert, but honestly I think I'm going to read it again because I can't remember any of it but, I think you "age" the garlic so we can store it, but seems like "green" garlic (right out of the ground) would be the best, guess I have to wait until next year ....

I've been getting fresh garlic from Farmer Bill. I've been using it right out of the ground. I didn't know I was supposed to age it. It has been delicious anyway.
