Did you know you can eat the tops of beets? Of course you did…. Well, how about the tops of radishes and carrots? Yeah, I didn’t know that either until one of our customers told us she uses the radish tops (can’t remember how) and our WWOOF volunteer told us he eats carrot tops (sauteed in butter, I believe) and another customer says she throws them in the Vitamix along with other greens for veggie smoothies.
I was intrigued by the carrot top idea since carrots are now coming in. Usually, I would cut the tops and throw them in the compost. This week, I decided to try something new. A quick Google search yielded carrot top & quinoa soup. I love quinoa, so this sounded great to me. I made it and thought it was really tasty and we are both still alive! I had heard that carrot tops are toxic, but apparently there are a bunch of people sharing recipes that use them. Here’s another one that caught my attention: edible radish, carrot, beet top salad. Radish tops are great with olive oil and lemon and also turnip and beet tops too with olive oil and lemon.
